I almost gave up

Christmas time is extremely busy time for everyone. This year though, the Christmas season felt like it was on steroids, if I'm being honest. Don't get me wrong, Christmas is one of my favorite times of the year. I love the feeling in the air, the music, time with family, time off of work, time to reflect on the birth of the savior, and usually I love giving and receiving gifts.


Like many of you, I had my list of gifts to shop for: something for my husband, friends, family, neighbors, etc. This year my husbands family decided to forgo exchanging siblings gifts, and I couldn't have been more excited. I was feeling a little grinchy because of the overwhelm and gifts seemed not a priority to me. I started shopping later than usual, and hadn't decided what I wanted to give my neighbor friends.


I have wanted to try mini cupcakes for the longest time and figured mini cupcakes would make a great treat to give my neighbors for Christmas! I already had all the supplies, so I planned to make cupcakes on the ONLY night in December I had free. I got out my ingredients, turned on my oven, and started to pull apart my cupcake liners and put them in the tins. Come to find out, they were not the right shape. The mini cupcake liners I bought were not fitting in my mini cupcake tins.


This was the straw that broke the camels back. I had overcommitted myself during the Christmas season and I had way too much to do. You know that scene in Christmas Vacation where Clark freaks out after he gets the certificate for the jelly of the month club instead of his Christmas bonus? That's how I was feeling. "Where's the Tylenol?!" I Right after I realized they didn't fit. I gave up. I turned off all the lights, abandoned the baking mess and sat on the couch to watch something on TV to take my mind off of everything. I actually love Christmas but this year I felt a little grinchy and I was just ready for Christmas to be over.


After a little while I remembered I had some baking supplies I hadn't gotten into in a while, and maybe there were some mini cupcake liners in there. I looked and sure enough there were some! Were they going to fit was the question. As you can see in this video, they did fit into the tin. My mini cupcakes tuned out perfectly and all my neighbors told me how amazing they were.


Even for seasoned bakers, things go wrong. If some part of your baking goes haywire, take a break regroup and go for it again. You’ll be glad you did.
