After many years of baking, I've learned a few things that would have made my path easier if I would have known them at the beginning. Here's what I'd want to know if I was starting at the beginning.
1. Don’t bake and decorate on the same day.
A hot cake cannot be frosted. I NEVER bake and decorate on the same day. I wrap the cake up with plastic wrap and freeze it. I pull it out of the freezer the next day and frost it. A chilled cake is 1000 times easier to decorate.
2. Keep it simple
There are so many decorating techniques you can master. I have found that the most important part is how it tastes so I make that my priority and keep the design simple. I decorate with buttercream swirls and a ganache drip. Even though my cakes are simple they turn out stunning.
3. You only need one good side.
You can spend so much time perfecting every part of the cake you are decorating. I have spent hours trying to get every single air bubble smoothed, every crumb covered, making the top edge perfectly sharp, but have come to learn that you only need one good side.
I now spend a short amount of time making sure most of my cake looks good and that there is one side that looks perfect. This will not only save you time, but also your sanity! 🫠
4. You don’t need all the fancy baking tools.
I have many many baking tools that are gathering dust on my shelves. I use the same few tools every time I bake and decorate and leave the rest alone. I always use my cake turntable, offset spatula, cake scraper, cake boards, and piping tips and bags. Those are the only tools I’ve used in the last little while. Just stick with the basics.
5. Baking will bring so much joy!
After all the mouths I’ve fed, all the candles blown out, all the classes taught, the cakes I see you make in your own home, the feeling is the same, joy!
